Place the 3 cups of Quinoa in the broth in a large sauce pan & bring to a boil. Reduce to simmer and cook for at least 10 minutes or until the liquid is absorbed into the grain & is translucent & soft. Saute vegetables in olive oil while adding seasoning & salt. Saute until slightly crisp. Combine cooked Quinoa & vegetables & then add almonds. Serve hot. This dish makes a great bed for your favorite grilled chicken or fish.
