SCOTT FARMS SPIRITED SOUTHWEST SCRAMBLED EGGS

By using egg-substitute and wonderful vegetables you can eat this without the guilt.  It is fantastic in flavor and is great for those outdoor cook-outs over a wooden fire in a cast iron skillet.

Ingredients:

  • 1 16 oz package of egg-substitute
  • 1 TBS of cooking oil (we prefer safflower oil)
  • 1/4 cup of diced bell pepper
  • 1/4 cup of diced roma tomatoes
  • 1/4 cup of chopped mushrooms (optional)
  • 1/4 cup of diced onions
  • 1/2 cup of colby-jack cheese
  • 1 tsp Scott Farms Spirited Southwest Rub

Directions:

Spray skillet with non-stick spray & add cooking oil. Mix egg-substitute & seasonings. Heat skillet, then add vegetables and cook until onions & peppers are soft.  Fold in eggs & cook for a few minutes then add cheese & stir until mixed. Cook until it reaches the consistency you desire in your scrambled eggs
