Scott Farms Mango & Cashew Salad

A wonderful healthy salad that has it's own unique favor. All ages like this one. 

Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/2 lb whole, unsalted cashews
  • 1 tsp Scott Farms Spirited Southwest Rub
  • 1/4 tsp salt
  • 3 TBS honey
  • 2 limes, juiced
  • 12 oz of green salad blend (romaine, spinach etc)
  • 1 1/2 mangoes, peeled ,seeded,diced ( about 1 1/2 cups)

Directions:

Heat some oil in skillet until hot, add cashews, Spirited Southwest, & salt: Stir in honey. Remove from heat,toss, set aside to cool. Use left over olive oil to whisk with lime juice in a small bowl. Combine salad, mango, & cashews mixture to make a great salad. Serve!!
