Scott Farms Hoppin Jon Salad

This is a spicy Southern salad that will make you appreciate the spicy life of our Southern culture


  • 2 1/2 cups low sodium chicken broth
  • 1 package of  Scott Farms Derty Rice Mix
  • 2 TBS  of oil (canola preferred)
  • 1 can of blackeye peas, drained (15-16oz can)
  • 1 cup of your favorite salsa (We prefer our  Scott Farms Salsa Grande)
  • 2 stalks of finely chopped celery
  • 1 carrot, diced
  • 1 small onion, diced (red onion preferred)



1) In a medium sauce pan add chicken broth & oil. Bring to a boil over high heat. Add Scott Farms Derty Rice Mix and bring back to a boil. Reduce heat and simmer for at least 25 minutes. Cover pan during the simmer to avoid loss of liquid.

2) Remove above mixture of rice & broth from heat and let stand at least 5 minutes. Then place on a sheet pan & let cool to room temp. (make sure to spread mixture evenly on sheet pan)   Transfer to a large bowl and then add the Celery, Carrot, Onion, Blackeye peas, & Salsa and toss well to combine. Serve room temp or refrigerate & serve cold.
