Italian Chicken Rolls

A healthy chicken dish for your favorite guest list.


  • 2 large boneless chicken breasts, cut into strips
  • 6 ounces of either Asiago, Parmesan, or Feta cheese cut into 4 (2-inch) cubes or you can use crumbles or shredded.  It is easier to use cubed cheese.
  • 1/2 cup high-quality oilve oil
  • 1 cup of plain bread crumbs (Italian if you prefer)
  • 1 TBS Scott Farms Grateful Garlic Seasoning
  • 1 TBS Scott Farms Herbs Et Cetera
  • 1/2 tsp salt (optional if on low sodium diet)
  • 1 large onion, sliced thickly lengthwise


Preheat oven to 350 degrees F

Spray a baking pan with a non-stick cooking spray. Wrap each chicken strip around each cheese cube & hold in place with a toothpick. Mix bread crumbs,seasonings & salt. Dip chicken in olive oil and then roll in bread crumbs. Place chicken in the baking pan and top with sliced onions. Bake in oven for 20-30 minutes, or until chicken is fully cooked through and the bread crumbs are golden brown.  For a faster version you can for go the rolls & cubed cheese and put chicken strips in olive oil & bread crumbs. Next layer with cheese crumbles or shredded cheese and bake for 20-30 minutes.
