Scott Farms Spirited Southwest Tortilla Wrap

This is a very healthy & tasty Southwest tortilla wrap that can be reheated in the microwave if wrapped in plastic wrap.  We love this for breakfast or dinner. 


  • Egg substitute equivalent to 2 eggs, or you can use 2 eggs
  • 6 corn tortillas ( We prefer the larger ones since they roll easier)
  • 1 tsp of Scott Farms Spirited Southwest Rub
  • Vegetable oil spray
  • 1 cup frozen fat free hash brown style potatoes
  • 1/2 cup of diced bell peppers (we prefer red for added color)
  • 1/2 cup of Canadian bacon (Diced)
  • 3/4 cup of shredded low fat or no fat cheese
  • 1/4 cup of canned black beans (Optional)
  • 1/4 cup of diced onion (Optional)



In a medium bowl, mix together potatoes, Canadian bacon, bell peppers,1 tsp of Scott Farms Spirited Southwest Rub, & optional ingredients (If you desire). Spray a medium skillet with a no-stick spray. Heat skillet to medium high. Add potato mixture to skillet, cook 10-12 minutes or until done. Turn potato mixture every 2-3 minutes. Add egg substitute or beaten eggs to mixture & stir occasionally until eggs are set. To assemble, layer potato-egg mixture with cheese on each tortilla. Roll like a jellyroll and serve immediately while hot. (hint: We place tortillas between damp paper towels and heat in the microwave oven before assembling wraps.) Enjoy!!
