Seasoned Grilled Vegetables

This dish is good cooked in the oven or on your outdoor grill.


  • 1 zucchini squash
  • 1 onion
  • 6 mushrooms
  • 1 tomato
  • 1 bell pepper
  • 1 carrot
  • 1 potato (or vegetable of your choice)
  • 2 T olive oil
  • 2 tsp. Scott Farms Rub (your choice)


Cut vegetables into pieces. Sprinkle with rub. Add olive oil and toss well. Place vegatables in a foil roasting bag. Grill over medium heat for 15-20 minutes, turning often. Vegetables may also be roasted in the oven.
